Foul Mudammas

INGREDIENTS
2 cups - Dried fava beans, soaked overnight
4 - Garlic cloves, chopped
1 - Onion, chopped
1 - Tomato, chopped
A pinch - Cumin
1 tb - Olive oil
1 - Lemon, juiced
To taste - Salt
To taste - Pepper
UTENSILS
Pot, Potato masher, Chopping board, Knife
INSTRUCTIONS
1. Cover beans with fresh water in a heavy bottomed pot.
2. Bring to a boil, then turn to a simmer.
3. Cook until beans have softened, add more water as needed.
4. Add garlic, and cook until soft.
5. Mash with a potato masher and stir until thick.
6. Serve warm with a sprinkle of cumin, olive oil, and lemon juice.
